It is often said that steam is the best heat source for indirect heating which heats object via heating medium. There are other mediums of indirect heating such as oil and hot water.
Compering with other mediums of indirect heating, steam is better in the following two points.
1) Uniformity
2) Rapidity

There is of course a reason that steam can heat objects uniformly and rapidly, and the key word is “condensation”.
First, what is “condensation”.
It is one of phase transitions and a transition from gaseous to liquid. When saturated steam is condensed, it turned to saturated water. This moment is the key of indirect heating with steam.
